Classic Summer Potato Salad Recipe

Ingredients

For the salad:

  • 500 g fingerling potatoes
  • 200 g fresh green beans
  • 100 g mizithra cheese (or another crumbly cheese of choice)
  • ½ cup Greek Kalamata olives, sliced
  • 1–2 tablespoons nonpareil capers
  • 1 small shallot, finely sliced
  • 2 cloves fresh garlic, finely grated
  • Fresh dill, generously chopped
  • Fresh oregano, generously chopped

For the dressing:

  • ¼ cup extra virgin olive oil
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 tablespoon red wine vinegar
  • 1 tablespoon honey
  • 1 tablespoon whole grain Dijon mustard
  • Salt and freshly ground black pepper, to taste

Steps

  1. Boil the fingerling potatoes in salted water until they are fork-tender, then drain and set aside to cool slightly.
  2. Blanch the green beans in boiling water for a few minutes until they are bright green and still slightly crisp. Drain and rinse with cold water to stop the cooking process.
  3. Once the potatoes have cooled, cut them in half and set aside.
  4. In a large mixing bowl, prepare the dressing by combining the extra virgin olive oil, lemon zest, lemon juice, red wine vinegar, honey, and whole grain Dijon mustard. Mix well until combined.
  5. Add the finely sliced shallots and freshly grated garlic into the dressing and let the flavors come together.
  6. Add the potatoes and green beans to the bowl, followed by the mizithra cheese, sliced Kalamata olives, and capers.
  7. Finish with plenty of freshly chopped dill and oregano.
  8. Gently toss everything together until the ingredients are evenly coated with the dressing.
  9. Serve immediately or allow the salad to rest for a little while so the flavors can develop even more.
